Quinoa 'Carrot Cake' Bites

I know I have been saying this a lot lately, but honestly, these Quinoa 'Carrot Cake' Bites are sooooooo good! I LOVE Carrot Cake and these bites tastes exactly like that.

I made them on a whim.

I was looking for a snack to take with us on our weekend trip to St. Louis. St. Louis is about 6 hours drive from Cincinnati and frequent snacking is the only way, I can keep the "Are we there yet!" syndrome at bay.

My gorgeous friend and blogger, Cocoawind and I have started a new series - Ingredient of the Month, where both decide upon an ingredient and come up with recipes.

Pizza has always one of those thing I have consciously shied away from. Not only its a long and tiring process to make it from scratch, but it is a "Carb Quicksand".

What's a "Carb Quicksand", you ask?

Well, it is something, where you take one innocent bite of your favorite comfort food (read: Simple Carbs) and before you know it, you are sliding down the rabbit hole into a bottomless pit of Carbohydrates, that will spike your Blood Sugar, giving you a false sense of well being. And mere moments later it will crash you so hard, you'll end up feeling really really lousy. This phenomenon, unfortunately, happens only to Diabetics, and it difficult for anybody else to even imagine how gross one feels at a time like this.

Toasted Quinoa, Dark Chocolate and Peanut Butter Cups

When me and Sarani of Cocoawind started our Ingredient of the Month - Kickass Quinoa series, little did I know that my entire perspective towards this super-grain is going to change.

Earlier for me, Quinoa was just a Low-Carb alternative to Rice. But it is so much more now.

My favorite Breakfast Cereal.

My go-to binding agent for my Burgers and Patties.

A protein and fiber boost for my muffins, snacks and other indulgent delights.

And now I have even incorporated Quinoa in desserts, making them indulgent and nutritious - all at the same time.

Chicken and Quinoa 'Pad Thai' Patties

"Mommy! This is the best Burger EVER!!!", declared Sid, at least 20 times in the 10 minutes, he took to wolf down the entire thing.

Sam nodded his head in affirmation saying, "It's really really good", while slathering some more Sriracha on the burger patty.

And I think I will agree with them. This Chicken and Quinoa 'Pad Thai' Patties is one of my best creation with Quinoa. All the amazing flavors of the delicious Pad Thai in a succulent burger (or smaller patties) with the goodness and health benefits of Quinoa. I think we've got a winner here!

'Fresh n Juicy' Strawberry Salsa

I was craving for a good Strawberry Salsa for sometime now. It all started when Sid had a mini meltdown in Kroger over a box of Strawberries a couple of months ago. The kid loves berries and Strawberries are his favorite. But out of season Strawberries aren't exactly sweet and juicy. But he was adamant.

As expected they were TART and almost inedible. Sid ate them anyways, puckering at the tartness after very bite. That's how much he loves Strawberries!

It stuck me a few days later that instead of torturing the boy, I should have made Strawberry Salsa.

That's what you do with sad fruits. You turn them into Salsa!

Quinoa Cornbread Muffins

I had read somewhere (most definitely a blog!) that there is no greater satisfaction than biting into a warm Cornbread Muffin with pat of butter. I wouldn't know, coz I never had a Cornbread Muffin. My mom never made one. Nor did my grandma.

But a damp, cold Monday in April finally gave me the pleasure of biting into a soft warm corn muffin with a dab of butter.

It was pure bliss!

Chicken and Quinoa Patties with Carrots and Zucchini

After Cocoawind decided the Ingredient of the Month for April, I was at my wits end. The month of April is dedicated to 'Kick-ass' Quinoa (pronounced as keen-wah).
Now, we consume about 2 pounds of Quinoa a month and you will always find a tub of cooked Quinoa in my fridge. But that is mostly as a pilaf or as a binding agent for burgers. I never thought or experimented with Quinoa in any other form.

I am a very optimistic person and try to find the silver lining in every dark cloud. A shocking twist of weather gave me the perfect opportunity to try an experiment with Quinoa and I am super happy with the result.

Fresh Pineapple Salsa

Like most Bengali, I too was born with a sweet tooth. Not just one but all 32 of them! 

Growing up, almost all our meals ended on a sweet note. And even today, I get intense craving for something sweet, especially after a hearty meat or fish based meal. I have also noticed that I tend to crave for dessert a lot less, after a vegetarian meal or after eating a salad which has some fruits tossed in or has a sweet vinaigrette or dressing. 

In short, having veggies or fruits or anything rich in natural sugars as a part of the meal, greatly reduces the need for a post meal dessert. At least for me it does!

Guacamole - The Eternal Favorite Dip!

How can you have a party or game night or a movie nightnight without a big bowl of Guacamole and an even bigger bag of corn chips?

Guacamole has been such a integral part of my life, especially while entertaining, that its almost hard to imagine that we met barely four years ago. Back in India, I had never seen or heard of Avocados or Guacamole or even the concept of Chip n Dip.

But when we met, it was love at first bite! 

A love, that continue to grow and manifest itself in developing crazy avatars of this delicious avocado dip!
