Dim Masoori - An Egg and Red Lentil Stew

Eggs are amazing. Comfort, convenience, nourishment - all packed in to a fist sized shell. Since our 3 member family consumes about 2 dozens eggs in a week, you can very well imagine how much we are in love with it. I hit a panic button every time I am out of eggs.

This recipe combines two of my most favorite comfort food - Eggs and Masoor Dal aka the Red Lentils.

Shakshouka in a Creamy Dreamy Roasted Red Pepper Sauce

The easiest way to trick my family in believing they are having a Michelin star chef inspired Gourmet dinner is by repackaging an old wine in a shiny new bottle and giving it a fancy name.

Shakshouka has been my secret weapon for a long time whenever the family wanted to eat something fancy! But they are a bunch of smart people and they eventually DID figure it out that I was feeding them the same ol' Egg Curry in a new avatar!

I had not choice but to up my game. Now who can resist a name as mouthful as Shakshouka in a Creamy Dreamy Roasted Red Pepper Sauce!

Stir Fried Zucchini tempered with Nigella Seeds

When I first moved to the US, Zucchini was the first vegetable I fell totally in love with. It has a very mild flavor profile and it picks up the flavor of what it's cooked with. It reminded me of Kancha Kumro. Kancha Kumro (which means raw or tender Pumpkin in Bengali), refers to tender dark green pumpkin/squash with a thin skin and a very mild taste.

Anda/Egg Bhurji - Indian Style Scrambled Eggs

A quick and easy and utterly delicious breakfast dish that you can eat for lunch and dinner - that's Anda (Egg) Bhurji for me. It is made every other weekend for breakfast, it's a staple in Sam's lunch box and a dinnertime favorite on hurried weeknights. Me and Sam are in awe and in love with this versatile dish since we were kids. It was also my Mom's go to dish on hurried mornings too.
